Low Carb Clam Chowder Recipe


What You Need:

3 strips of thickly sliced bacon

1 med onion (chopped into small pieces)

2 med stalks of celery (chopped into small pieces)

2 cloves of pressed or minced garlic

1/4 tsp of black pepper

3/4 tsp of Old Bay Seasoning*

Low-carb thickener

3/4 cup of heavy cream

3/4 cup of unsweetened soy milk**

1 cup of clam juice

3 cups of cauliflower (chopped)

2 6½ oz cans of chopped clams

1 tsp of dried thyme or 1 Tbsp of fresh thyme

2 Tbsp of fresh parsley (minced)


* If you like your soup a bit spicy you can use 1 tsp.

** If you prefer to not use soy, you can use regular milk, half and half, or water.


What To Do:

First, chop your bacon into little cubes and cook them until they are crisp. I prefer to cook them in the soup pot. Then take out your bacon (I find that a slotted spoon works best) and pour out all but a Tbsp of that rendered fat. Next you’ll want to fry your celery and onion until it starts to soften. Then add garlic and your spices EXCEPT for the thyme. Stir everything and cook it for a good minute. Now add your liquids and stir it. Then you’ll need to add your low-carb thickener at this point. I really like adding it slowly. I shake it through a strainer and also whisk it in to keep it from clumping. You’ll want to stop a bit before it is as thick as you like it. It keeps thickening as it continues to heat. Then turn off the heat when it begins to simmer.

Next, you’ll boil, steam or microwave your cauliflower until it is fork tender, and drain. Now add the thyme, parsley, cauliflower, bacon and clams to the mixture. Bring up the heat a bit again until it is just at a simmer.

This recipe yields 6 servings.

Nutritional Info: Each serving has 6g effective carbohydrate plus 2g of fiber (not including the low-carb thickener), 12g of protein, and 226 calories. If you used half and half add 30 calories and 1g of carbohydrate. If you used milk, see the Carb Counts in the Milk and Milk Substitutes.

Baked Stuffed Clams Recipe By Simply Recipes

Although this recipe calls for fresh clams, you can also make this with canned minced clams (use one 6.5 ounce can, drained of all but 1 Tbsp of clam juice). Bake as directed on clam shells, or bake in a casserole dish and use as a dip with crackers.

If you’ve purchasing clams, keep them in the refrigerator covered with a damp, wet towel. If you have dug up your clams, keep them covered with cool sea water in a bucket. Throw away any cracked or broken clams.
Add to shopping list

10 large chowder or quahog clams, rinsed, sand and grit removed
3 Tbsp minced onion
1/2 cup butter (1 stick)
2 Tbsp chopped fresh parsley (or 2 teaspoons dried)
1 clove garlic, minced
1 Tbsp lemon juice
1 cup bread crumbs
1 Tbsp clam juice (or cooking liquid from steaming the clams)
Salt and freshly ground pepper to taste
1/4 cup grated Parmesan cheese


1 Fill a large pot with 1 1/2 to 2 inches of water. Bring water to a boil. Add the clams to the boiling water. Reduce the heat to a simmer and let the clams steam for approximately 6-10 minutes, until the shells open. Remove clams from the pot and let cool enough to handle. Discard any clams that have not opened (if they haven’t opened it means they were dead to begin with and should not be eaten).

2 Remove the clam meat from the clams (not the clam foot which is attached to the shell) and mince finely. Break apart the clam shells from their hinges. Rinse. Pick 10-12 of the cleanest, nicest looking clam shells and set aside.

3 Preheat oven to 350°F. In a sauté pan, melt the butter on medium heat and add the minced onion. Once the onions have softened (2-3 minutes), add the garlic. Cook the garlic for 1 minute, then add the parsley, bread crumbs, minced clams, lemon juice, and clam juice. Stir until the stuffing mixture is completely moistened. (If too dry, add a bit more butter or clam juice; if too wet, add a bit more bread crumbs.)

4 Lay clam shells on a baking dish. Scoop a little stuffing mixture onto each clam shell. Sprinkle with grated Parmesan. Bake for approximately 20-25 minutes, until Parmesan is lightly browned on top.

Cook a few strips of bacon until fat renders but not brown or crispy, chop and mix in with the stuffing. Use crumbled up Ritz crackers for the breadcrumbs. So good!

1 tablespoon extra-virgin olive oil
1/2 cup chopped onion
1/2 cup chopped red bell pepper
2 cloves garlic, minced
2 cups instant brown rice
1 1/3 cups reduced-sodium chicken broth
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 large pinch saffron (see Note)
1 pound peeled and deveined raw shrimp (21-25 per pound)
1 cup frozen green peas, thawed
1 pound mussels, scrubbed well (see Tip)
4 lemon wedges (optional)


How To Fix It:

First off, heat the oil in your large skillet over medium heat. Next, add the garlic, onion, and bell pepper. Cook it, making sure to stir occasionally. The vegetables will soften, this should take about three minutes. Add your rice, salt, pepper, broth, thyme, and saffron. Bring it all to a boil over a medium heat. Cover it and cook for five minutes.

Now, stir in the shrimp and peas. Next, place the mussels on top the rice and and cover. Continue cooking until your mussels have gotten nice and open and your rice is tender. This should take about five minutes. Remove it from the heat and let sit, covered. In about five minutes most of the liquid is absorbed and it can be served with lemon wedges, if you’d like.

What You Will Need:

twelve clams medium-sized little neck clams are best
One tablespoon of unsalted butter
Two strips of center-cut bacon simply slice each into six pieces of equal size
Two tablespoons of finely diced pieces if red bell pepper
Two garlic cloves mince them into fine pieces
One quarter cup of plain breadcrumbs
One tablespoon of Parmesan that is finely grated
freshly ground black pepper
Just a pinch of salt
chopped flat leaf parsley
Some lemon wedges
Use rock salt to taste

Clams Casino is a classic appetizer for those special holiday parties, football games or any other time you want to use an easy recipe that impress your guests. Clams casino is one of the easiest clam recipes to make ever. Anytime you have bacon and butter in the same recipe, it can’t taste bad! Whether you prepare them ahead of time or at game time it is easy.

What To Do:

Heat the butter in a skillet using medium heat. Next add the bacon and then saute the bacon until it is cooked. Do not cook the bacon until it is crisp. Next take a slotted spoon and transfer the cooked bacon onto a plate and set aside.

Now add your red pepper into your bacon drippings that are in the skillet. Cook the red peppers for two minutes. Now add the garlic and allow to cook for one additional minute. Remove from the heat and then add the breadcrumbs, Parmesan cheese, black pepper, and salt and stir. Set this mixture aside for now.

Next pour about two inches of clean water into a Dutch oven, or other type of heavy pot that has a tight-fitting lid. Now bring the water to a rapid boil using high heat. Now add your clams, put on the cover, and then cook for around five minutes, or at least until the shells open up. It is very important to remove as well as drain the clams when they open. When the clams are cool enough to handle you can proceed.

Now twist and then pull the clam shells apart, and then remove the clams. Next place the clams back inside the deeper of the two shell halves. Spread the rock salt on a heatproof baking dish, and set the clams on top of the salt, pressing in slightly.

Divide the breadcrumb mixture evenly over the top of each clam shell, and top with one piece of bacon. Broil on high, about 8 inches from the heat, until the tops are browned and the edges of the bacon are crisp. Sprinkle on the fresh parsley, and serve hot with lemon wedges.
