What You Will Need For Your Banana Bites:

Two cups of bittersweet chocolate chips
Two Tablespoons of canola oil
Optional assorted toppings for coating your bananas (such as toffee bits, chopped Butterfinger, chopped peanuts, or toasted shredded coconut)
Three ripened, peeled and sliced bananas*

*I suggest slicing them in about half inch slices.

How To Make Your Frozen Chocolate Covered Banana Bites:

To start you will need to stir the chocolate and canola oil in a small saucepan over a low heat until smooth and then let it stand for about fifteen minutes to cool.
Then, place each topping in a separate little shallow dish. Now you will need to line the baking sheet with some foil and arrange your banana slices on the foil. Simply use your fingers to dip the banana slices (one at a time) in the chocolate, making sure to coat it completely. Shake off any excess chocolate. Then if you are wanting to used an extra topping, drop the dipped banana into it. Use your clean hand to sprinkle more of the topping over the banana to coat and then transfer it to the foil-lined sheet. Repeat with remaining banana slices. Freeze them until firm (which should take about three hours). Lastly just serve and enjoy!

What You Will Need:

For the brownie batter-

1 stick (1/2 cup) unsalted butter
2 ounces of chopped unsweetened chocolate
1 cup of sugar
2 large eggs
1/2 teaspoon of pure vanilla extract
2/3 cup of all-purpose flour

For the cheesecake batter-

8 ounces of soft cream cheese
1/3 cup of sugar
1 large egg yolk
1/4 teaspoon of pure vanilla extract


What To Do:

First, put the oven rack in middle and preheat your oven to 350°F. Then, butter your 8in square baking pan. Heat the butter and the chocolate in a three quart heavy saucepan over a moderately low heat, making sure to whisk occasionally, just until  it is melted. Remove from the heat and whisk in your vanilla, sugar, eggs and a pinch of salt until mixed well. Whisk in the flour and spread in baking pan. Now, whisk together the cheesecake batter ingredients in a separate small bowl until they are smooth. Dollop over brownie batter, then swirl in with a knife or spatula. Bake everything until edges are slightly puffed and center is just set. This should take about thirty-five minutes. Let cool, serve and enjoy!

Sweet potato pie features a milder taste than pumpkin pie, along with the consistency is a bit diverse. It is actually commonly a southern dessert, however it is a good alternative to pumpkin pie or pecan pie anywhere. This recipe is derived from the owner of a bakery in the South Hamptons. This version doesn’t demand baking the sweet potatoes initially. This whole recipe could be put together in the time it takes to pre-heat your oven, also in our busy lives, which is a welcome relief.





What You Will Need:

(1) 9-in refrigerated pie crust (unbaked)

(1) 16 oz can of sweet potatoes (drained and mashed)

1/2 cup salted butter (softened to room temp)

3/4 cup sugar

(1) 5-ounce can evaporated milk

2 large eggs

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1 teaspoon vanilla


What To Do:

First thing you will want to do is to preheat your oven to 350 degrees. While it is preheating we will mix all of our ingredients together.

For the most part this is a “dump and go” recipe since you just mix all the ingredients together and bake. Before you dump everything, stir together the sweet potatoes and the butter until the mixture is smooth. Next dump in the remaining ingredients: the sugar, evaporated milk, eggs, nutmeg, cinnamon, and vanilla.

It is very important to mix all ingredients until smooth to prevent lumps and to evenly distribute the spices. You may do this by hand in case you should, but for those who have a mixer, feel free to use it. It is going to be considerably faster and your arm will not tire.

When the consistency of the filling is smooth, pour it in to the prepared pie crust.

Bake the pie for an hour or till the filling feels firm when lightly pressed with your fingertips. Once it is finished you may choose to top it with some whipped cream. Then just enjoy!

Most people tend to forget dessert, just because they feel it has to be a fancy affair that takes forever to make. Well I am here to tell you that you can get “fancy” with out all the fuss. What You Will Need:

2 bags Pepperidge Farm Chessmen cookies

6 to 8 bananas, sliced

2 cups milk

1 (5-ounce) box instant French vanilla pudding

1 (8-ounce) package cream cheese, softened

1 (14-ounce) can sweetened condensed milk

1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream


What You Will Need To Do:

First you will need to line the bottom of a thirteen by nine by two inch dish with one bag of Pepperidge Farm Chessmen cookies and then layer sliced bananas on top of them.

Now take a good sized bowl and combine your pudding mix and milk. Then you will blend it well. I find it best to use a handheld electric mixer. Now you will need to grab another bowl and combine the condensed milk and cream cheese together. You will mix this until it is smooth. Now, fold your whipped topping into your cream cheese mixture. Then add your cream cheese mixture to your pudding mixture. Make sure to stir until it is all well blended. Next pour the combined mixtures over your bananas and cookies and then cover it with your remaining cookies. Lastly refrigerate it until you are ready to serve. And of course enjoy!

What You Will Need:

One loaf of refrigerated french bread dough

Three tablespoons of softened butter

One quarter cup of sugar

One tablespoon of cinnamon

One cup of some powdered sugar

Four teaspoons of milk*

Half teaspoon of vanilla

Colored sugar**


How To Bake It:

First you will need to preheat your oven to 350 degrees F. Next, unroll your french bread dough into the shape of a large rectangle. It should come out to be about about sixteen by twelve inches. Brush over the dough lightly with some softened butter. Then mix together the cinnamon and sugar. Take your cinnamon and sugar mixture and  sprinkle it over butter.  Now cut your dough in half (lengthwise) and then cut it crosswise into some strips that should be about one and a quarter inches wide. Twist two of the stips together. You will need to tie each strip loosely into a nice knot, stretching it gently if you need to, and then place it on a baking sheet. Make sure to space them about two inches apart. Then, bake them for about twenty-five to twenty-eight minutes. Let cool. While they cool,  mix together your vanilla, powdered sugar, and milk. Now dip each knot into the icing mixture and then sprinkle on your colored sugar. Then simply serve and enjoy!



* You may choose to use more milk to get the desired consistency.

** Purple, Yellow and Green are the typical colors for the sugar used on a Mardi Gras king cake, but you may used whatever colors you prefer.

With the summer winding down I find myself trying to find new ideas of things to do with my kids. Crafts and games are fun, but the activities we seem to most enjoy are the ones we get to eat after! This “Quick Icebox Sandwich Recipe” was a great treat that not only allowed my kids to learn something new and feel helpful, but also for us to spend quality time together. My favorite part is that you really can customize however you like. you can change the chocolate chips to something else, use another flavor of pudding or both. This recipe is sure to be a summertime tradition for us that i hope my children will never forget! I included reference links and also a how-to video for those of you who are more visual like me! Prep: 20 min. + freezing
MAKES: 24 servings


What You Will Need To Get:

One 3.4oz package of instant vanilla pudding mix
Two cups of cold milk
Two cups of whipped topping
One cup of mini semisweet chocolate chips
Twenty-four halved graham crackers


How To Prepare:

First you will want to mix your pudding and the milk per the package directions. Then refrigerate the mixture until it is set. Now that it has set you will fold in your chocolate chips, and whipped topping.
Place the twenty-four graham crackers on to a baking sheet. Next, top each graham cracker with three Tbsp of the filling mixture. Place a second graham cracker on top. Then wrap the sandwich individually in some plastic wrap and freeze them until they are firm. This should take between an hour to an hour and a half, depending on your freezer settings. Lastly serve and enjoy!

What You Need:

Three cups of some old-fashioned oats

Two cups of some all-purpose flour

One and a half packed cups of brown sugar

One tsp of ground cinnamon

One cup of cold cubed butter

Eight cups of thinly sliced peeled tart apples

One pack (Fourteen ounces) of halved caramels

One cup of divided apple cider


How To Make:

First you will need to preheat your oven to 350 degrees F. Then take your large bowl and combine the flour, oats, cinnamon and your brown sugar. Now cut in your butter until crumbly, then press half of the mixture in to a greased thirteen by nine inch baking dish. Layer with a mixture of half your apples, one cup of the oat mixture and caramels. Continue to repeat those layers. Then pour a half cup of cider over the top.

Bake everything for fourty minutes at 350 degrees F (make sure to keep it uncovered). Then you will need to uncover and drizzle the remaining cider on top. Return it to the over to bake for an additional twenty to twenty-five minutes longer, until the apples get tender. Serve warm and enjoy!


*Also pairs great with a scoop of vanilla ice cream.

What To Get:

Two cups and Six tablespoons of cake flour
Two tsp of baking powder
One tsp of salt
Three cups of fresh blueberries
One cup whole milk
Two tsp of vanilla extract
One tsp of freshly grated lemon peel
Two sticks of room temp unsalted butter
One and a half cups of sugar
Four large eggs
Lemon Cream Cheese Frosting
Strips of lemon peel (optional)


How To Do It:

First you will need to preheat your oven to 350 degrees F. You’ll need three nine inch-diameter cake pans with one and a half inch-high sides, coat them with butter. Line the bottom of your pans with parchment paper; butter paper. Next dust your pans with flour. Now sift the salt, cake flour, and baking powder into a medium sized bowl. Transfer one Tbsp of the flour mixture into a large bowl. Add your fresh blueberries and toss to coat. Put aside the remaining flour mixture and blueberries.

Stir together the vanilla extract, whole milk, and grated lemon peel in your small bowl. Use an electric mixer and beat the butter in another large bowl until it is light and creamy. Gradually add your sugar, beating it until the mixture is light and fluffy. Next you will need to beat in your eggs one at a time. Then beat the flour mixture alternately with the milk mixture in three additions each, just until blended. Now fold in your blueberries and divide the batter equally among the pans.

Bake your cakes until your tester (knife or toothpick) inserted into the center comes out clean. This should take about twenty-five minutes. Then cool your cakes in their pans on racks for about ten minutes. Now run the knife around the pan sides to loosen the cakes. Turn the cakes out onto your racks to let them cool completely. Peel off your parchment paper.

Transfer one cake layer to the platter and spread three-quarter cup of cake frosting over the cake layer. Top the first layer with another cake layer. Once again take three-quarters cup of frosting and spread it on the top of the second cake layer. Top with the third cake layer. Spread the remaining frosting over top of the third layer and on the sides of the cake. (Cake can be prepared up to one day ahead of time. Cover it with a cake dome and refrigerate. Let the cake stand for thirty minutes at room temp before continuing.) Lastly garnish the cake with extra blueberries and lemon peel strips, if desired, and serve.

What You Need To Get:

One seamless sheet of Pillsbury Crescent Dough
Eight ounces of Coconut Greek Yogurt
Three cups of fresh blueberries
Three medium bananas
One lb of fresh strawberries
Powdered sugar (if desired)


How To Make It:

First you will need to preheat your oven to 375 degrees F. Take a baking sheet that you have greased and lay out the Crescent Seamless Dough Sheet so it makes a rectangle. (make sure to push down your corners so they don’t flare up.) Next, bake for fifteen to twenty minutes until it is lightly golden. Remove from the oven and let it cool to room temperature. If you would like, dust lightly with powdered sugar. Then you will spread your yogurt on the top so that the whole pizza is covered, with the exception of a ½-inch border around the edges. Make a nice little border of blueberries all around the outside, then fill in the upper-right corner with blueberries to make your blue rectangle for the American flag. Get a cutting board and slice up your strawberries into halves and your bananas into thin coins, try and make them look about the same size. Lastly, place the strawberries and bananas onto the pizza flag to make the red and white stripes. Serve it immediately or you can refrigerate it for up to a few hours. Enjoy!

What You Will Need:


Three-quarters cup of oats

Three-quarters cup of flour

Two-thirds cup of packed light brown sugar

One tsp of ground cinnamon

One-half tsp of ground ginger

Pinch of kosher salt

One stick of diced cold unsalted butter

Four Braeburn or Fuji apples

Four tsp of honey



What To Do:

First, get a bowl and combine all of your dry ingredients and the diced butter. Now, rub your mixture quickly between your finger tips until small moist clumps are formed in a loose and sandy mixture. Refrigerate your mixture while preparing your apples.

Then, preheat your oven to Three-hundred Fifty degrees. Get your apples and cut off a small layer from the bottom of each apple to make a flat, stable bottom surface. Take a small paring knife and cut a cylindrical shaped cone out the top of the apple, moving about 1-inch outside of the core. Think in the manner of removing the top of a pumpkin when carving a Jack O’Lantern. Remove the apple top and discard. Using a melon baller or a teaspoon, scoop the remaining core and seeds. Make sure not to puncture the base of the apple.

Place your apples on to a baking sheet or pie dish and fill each with your teaspoon of honey. Spoon in the mixture, packing lightly until it is heaped and overflowing over the sides of your apples.

Place the apples on the top or middle rack, and let bake for forty minutes or until your filling is golden brown and the tip of a paring knife can be inserted into the side of the apple with little or no resistance. Let your apples sit for 10 minutes before serving. Enjoy!
