Grilled Fish With Pineapple Salsa

It takes what could be just plain old grilled fish and adds a little something extra, with the pineapple salsa you will find this dish to be anything but complicated or boring. Grilled Fish With Pineapple Salsa





What To Get:

2 cups of fresh pineapple (cubed)

2 chopped green onions

1/4 cup of green pepper (finely chopped)

1/4 cup of fresh cilantro (minced)

4 tsp AND 2 Tbsp of lime juice (keep them divided)

1/8 tsp AND 1/4 tsp of salt (keep divided also)

Dash of cayenne pepper

1 Tbsp of canola oil

8 fillets*

1/8 tsp of pepper


* I just use tilapia & keep my filets around 4oz each

What To Do:

Take a small bowl and in it combine your green pepper, onions, cilantro, pineapple, 1/8 tsp salt, 4tsp of lime juice and cayenne. Chill until ready to serve. Next combine the remaining lime juice and oil and drizzle it over the fillets. Sprinkle on the remaining salt and pepper. You may want to use some long handled tongs and then moisten a paper towel with cooking oil as well as lightly coat your grill rack. Then, grill your fish (while covered) over a medium heat or you can also broil 4 in. from heat for about 3 to 4 min on each side. The fish should flake easily with a fork. Lastly serve with your salsa.

Makes 8 servings (2 cups of salsa).

Nutritional Facts: 1 tilapia fillet with a 1/4 cup of salsa has 131 calories, 3 grams of fat (1 gram of saturated fat), 55 miligrams of cholesterol, 152 miligrams of sodium, 6 grams of carbohydrates, 1 gram of fiber and 21 grams of protein.

Pan Fried Flounder Recipe

This is a simple, yet great tasting dish! This “Pan Fried Flounder Recipe” is the perfect quick weeknight dish to put together after a long day at work. Total Time: Fifteen minutes
Prep Time: Five minutes
Cook Time: Ten minutes
You Get: Four servings

What To Get:

Four flounder fillets (skinless)
Two Tbsp of extra virgin olive oil
Salt and pepper
Three divided Tbsp of butter
The juice of one lemon
One small bottle of capers

What To Do:

First you will need to thoroughly wash your fillets in some cold water, and pat them dry. Now season with the salt and pepper. Then you will coat your fillets in the flour. Put your oil and the two tablespoons of butter in a flat skillet and heat it on a medium-high heat and let the butter melt. Maintaining heat, cook the fillets on each side for about three minutes (cooking time may vary due to size of fillets), until they are deep brown and crispy. You should only turn your fillets once.

Remove your fish from the skillet and move to a serving platter. Turn the heat off. The whisk remaining one Tbsp of butter into the skillet. Pour the capers in (including the liquid) and add the lemon juice. Whisk it well and pour the freshly made sauce over your fish fillets. Serve immediately. enjoy!

Stuffed Talapia

Makes: 6 servings


Grocery List:

One finely diced sm onion

One finely diced celery rib

Two Tbsp of finely diced red bell pepper

Four Tbsp divided of butter

One cup of drained crab meat

One-third cup of panko breadcrumbs

One-third cup of mayo

One lightly beaten egg

Half tsp of seafood seasoning

Six 4oz talapia fillets




How To Make It:

1. Take a skillet and melt two Tbsp of butter. Then saute’ the onion, the red pepper and the celery in your butter until they are all tender. Remove it from the heat. Now, mix your crab meat, egg, breadcrumbs, mayonnaise and seafood seasoning in.

2. Divide your crab meat mixture between each of your talapia fillets, rolling them up, and securing them with toothpicks. Next put them seam side down in a baking dish that has been greased.

3. Now, melt your remaining two Tbsp of butter and drizzle it over the fillets.  Sprinkle them with the salt and paprika to taste.

4. Bake in the oven at 350° for twenty to thirty minutes, or until the fish flakes nice and easy when touched with a fork. Lastly, remove the toothpicks and serve immediately. Can be served with your choice of sides. Enjoy!

What you’ll need:

2 lbs. of fish fillets
1/4 cup of butter
2 Tablespoons of parsley
1 Tablespoon of lemon juice
1/2 teaspoon of dill weed
1 medium onion (sliced)
2 medium carrots sliced thinly (vertically)

salt and pepper

Cooking Instructions:

First, sprinkle your fillets with some of the salt and pepper. Then you will need to combine your butter, parsley, dill and lemon juice. Now cut out 6 double 18in squares of the foil. On half of the double square, place your fillet. Then top it with an equal amount of the butter mixture, and some carrots and onions. Fold your foil over and seal the edges with double folds. Package can be placed on the grill. Let it cook for about ten to twelve min. This recipe makes 6 servings.
