What To Get:

One chopped and roasted red bell pepper

One minced shallot

One minced garlic clove

One tsp of minced jalapeño pepper

Three Tbsp of plain greek yogurt

One Tbsp of apple cider vinegar

One tsp of fresh lemon juice

One quarter cup + One Tbsp of extra-virgin olive oil

Kosher salt

One torn head of lettuce (large pieces)

One quarter cup of cilantro leaves

One tsp of fresh lime juice

Two wedged Hass avocados

One pound of cooked shrimp

 

How To Make It:

 

First you will need a blender. Dump in the vinegar, garlic, roasted pepper, shallot, jalapeño, yogurt, and lemon juice and puree them until the mixture is smooth. Scrape out your puree into a medium sized bowl and then whisk in a quarter cup of your olive oil. Season with the salt to taste.

Now take a large bowl and toss together the lettuce, cilantro leaves, one Tbsp of olive oil, and your lime juice. Then season to taste with salt. Arrange your dressed lettuce, shrimp, and avocado wedges on the plates and then drizzle some of your dressing over everything. You can serve the remaining dressing on the side. If you would like you can also make the dressing before hand and refrigerate overnight! Enjoy!

Easy Louisiana Style Corn and Crawfish Bisque

 

 

Here in Louisiana food isn’t just something we eat, it is a way of life. Most of our get togethers here are centered around food. A popular Cajun dish is corn and crawfish bisque. Now this can be served in two ways, either a Roux based or a Cream based. I personally like my bisque with a cream base so that’s the recipe I’ll use for this article. Give this recipe a try, and then leave me a comment telling me how it came out!

Easy Louisiana Style Corn and Crawfish Bisque

 

What You’ll Need:

1 stick of Butter

2 Tbsp of Flour

1 lb of peeled Crawfish

1 med chopped Onion

2 (15oz) cans of Sweet Cream Corn

1 (15oz) can of Sweet Corn

1 cup of chopped Green Onions

1 qt of Heavy Cream

1 tsp of Worcestershire Sauce

1/2 cup of Cooking Sherry

Season to taste with your favorite Cajun Seasoning

 

What You’ll Do:

In a large pot you’ll need to melt your butter over a med high heat. Then you will add all of your onions and sauté them until tender. Should take about 5-6 mins. Next, add the flour and stir everything for about 5 mins or so to create a roux, then season to taste. Add the ½ tsp of Worcestershire sauce next. Now it is time to put in the crawfish, corn, cream corn, heavy cream and sherry. Bring this mixture to a boil. Once boiling, reduce your heat to a low-med heat and continue cooking for about 40mins. The just serve and enjoy!

Shrimp and Spanish Chorizo Bites

 

Most of my recipes focus on main dishes, so I thought I’d mix it up a bit and show you an appetizer! While this appetizer is extremely easy to whip up, the flavors you will experience are anything but simple.  A savory, smokey with a hint of sweet…it really is quite a bit of taste to process.  Apart from the phenomenal flavor, there is this attractive quality of being a fun and delicious food on a stick. I don’t know anyone who doesn’t think that is fun!  In one hand you hold your stick, in the other, a great drink & you’re set!

 

 

Yields about 30 bites

 What you’ll need:

1/2 lb of med shrimp, peeled and de-veined (about 30 shrimp)
1 (7.9 oz) pack of Spanish chorizo, sliced into 1/4-inch “rounds”
1 finely minced clove of garlic
1/2 tsp of dried oregano
1 Tbsp of red wine vinegar
1 Tbsp of a dry Sherry
1/4 cup of extra virgin olive oil, plus a little extra for your pan
2 Tbsp of fresh chopped flat-leaf parsley

 

What To Do:

Get a medium sized bowl and in it combine the shrimp, oregano, garlic, vinegar, 1/4 cup of olive oil and Sherry. You’ll toss everything to coat. Then let it marinate in your fridge for a good 30mis.
Then, skewer a shrimp and a round of chorizo onto your toothpicks or skewers. Repeat until all the chorizo and shrimp have been used.
Next, you will want to work in batches. Heat one Tbsp of the olive oil in your large skillet over a med high heat.  Place some skewers in the pan and sear them on both their sides until the shrimp are nicely cooked through and the chorizo lightly browns. This should take about 3-4min. Lastly put your skewers on a serving platter and then garnish them with some parsley.  Serve them immediately. Most importantly, enjoy!

Shrimp Salad Sandwich Recipe

 

Servings: Makes 4 servings
Prep Time: 15 min
Difficulty: Easy

 

What To Get:

1lb of shrimp (cooked, peeled and de-veined)
3 finely chopped hard boiled eggs
3 minced celery stalks
1/2 cup of mayonnaise
Dash of onion salt
Salt and pepper (to taste)
Seasoning salt
Celery salt
8 slices of your choice bread (I like mine toasted)
* Tomato slices and lettuce are optional*

 

 

What To Do:

First, make sure the shrimp is patted as dry as possible. Then chop your shrimp into nice chunky pieces. If your not a fan of it chopped chunky, you can always switch it up and chop it as fine as you would prefer. Now, put your shrimp in a large bowl and add your celery, the eggs and the mayonnaise. Mix your ingredients very well. Next add the seasonings as you would like. Now combine all the ingredients together. You’ll then get your choice of tasty bread. I personally like to spread a bit of mayonnaise on both pieces of bread and then just scoop up some shrimp salad and put on the bread. You cut the sandwich how you like depending on what bread you used. I also like to serve it with some lettuce and tomato, but you do not have to. Now take a bite and enjoy!

Grilled Fish Taco Recipe

A grilled fish taco is a delicious treat. This dish originated around the San Diego area. Although most of the fish tacos in that area tend to be fried, I think that the grilled fish tacos are the ones that really stand out. I also prefer them because they have a much lighter taste than those that are fried. This recipe makes 6-8 serving (about 12 tacos).

 

Ingredients:

Lime-cilantro sour cream sauce:

1 cup of sour cream
1/2 cup of mayonnaise
3 Tablespoons of fresh cilantro (minced)
The grated zest from 1 lime
1 Tablespoon of fresh lime juice

For your tacos:

2 teaspoons of ground ancho chile powder
1/2 teaspoon of ground cumin
3 minced cloves of garlic
1/2 teaspoon of kosher salt
1/4 teaspoon of freshly ground black pepper
2 Tablespoon of olive oil
3 pounds of firm-fleshed whitefish fillets
2 dozen 6 in. tortillas (corn)
2-1/2 cups of green cabbage (shredded)
2-1/2 cups of red cabbage (shredded)
Pico
4 quartered limes

 

Cooking Instructions:

For your lime-cilantro sour cream sauce you will need to combine all of your ingredients in 2-cup measuring cup and whisk them until they are smooth. Lastly, refrigerate up to 4hrs until you are ready to use it.

For the tacos themselves you will need to get a small bowl. In that bowl, combine your ancho powder, garlic, cumin,salt, and pepper together and stir. Then add your oil and whisk into a loose paste. Next, rub your fish with the spice blend paste and let them marinate in your refrigerator for at least 30mins but no more than 4hrs.

Then, you’ll need to light a charcoal fire or you can preheat your gas grill to high and then oil the grill’s cooking surface. If using charcoal, let the coals burn down to med high fire or if using gas adjust temp to the same. Grill your fish until they are just cooked through (about 3-4 min per side). Then, move your fish to a cutting board and coarsely chop them. Divide your tortillas into 2 stacks and wrap each one in foil. Place them on grill until they are heated through, which should take about 5min. Take a large bowl and mix the green and red cabbage. Then you are ready to assemble your tacos to your liking and enjoy!

Stuffed Talapia

Makes: 6 servings

 

Grocery List:

One finely diced sm onion

One finely diced celery rib

Two Tbsp of finely diced red bell pepper

Four Tbsp divided of butter

One cup of drained crab meat

One-third cup of panko breadcrumbs

One-third cup of mayo

One lightly beaten egg

Half tsp of seafood seasoning

Six 4oz talapia fillets

Salt

Paprika

 

How To Make It:

1. Take a skillet and melt two Tbsp of butter. Then saute’ the onion, the red pepper and the celery in your butter until they are all tender. Remove it from the heat. Now, mix your crab meat, egg, breadcrumbs, mayonnaise and seafood seasoning in.

2. Divide your crab meat mixture between each of your talapia fillets, rolling them up, and securing them with toothpicks. Next put them seam side down in a baking dish that has been greased.

3. Now, melt your remaining two Tbsp of butter and drizzle it over the fillets.  Sprinkle them with the salt and paprika to taste.

4. Bake in the oven at 350° for twenty to thirty minutes, or until the fish flakes nice and easy when touched with a fork. Lastly, remove the toothpicks and serve immediately. Can be served with your choice of sides. Enjoy!

First, sprinkle your fillets with some of the salt and pepper. Then you will need to combine your butter, parsley, dill and lemon juice. Now cut out 6 double 18in squares of the foil. On half of the double square, place your fillet. Then top it with an equal amount of the butter mixture, and some carrots and onions. Fold your foil over and seal the edges with double folds. Package can be placed on the grill. Let it cook for about ten to twelve min. This recipe makes 6 servings.
