What You Will Need:

 

Two cups of chopped sweet onion (One lg onion)

Two cups of chopped parsnip (Three lg parsnips)

One and a half cups of chopped and peeled Granny Smith apple (One lg apple)

One quarter tsp of salt

One tsp of freshly ground black pepper

Three cups of water

Two cups of fat-free chicken broth

Three (Twelve ounce) packages of frozen butternut squash (thawed)

Two Tbsp of whipping cream

One-eighth tsp of paprika

One-eighth tsp of ground cumin

One half cup of light sour cream (optional)

Eight tsp of chopped fresh chives (optional)

 

What To Do:

 

First you will need to combine the water, sweet onion, apples, parsnip, salt, pepper, chicken broth,  and squash, in a 5-quart electric slow cooker. Cover it and cook on LOW for six hours.

Next, put one-quarter of the squash mixture into a blender. Then, remove the center piece of blender lid (to help allow the steam to escape); secure the blender lid on blender. Now put a clean towel over opening in blender lid (to avoid splatters). Blend the mixture until it is smooth. Next, pour it into a large bowl and repeat the steps with the remaining squash mixture. Then stir in the whipping cream, cumin, and paprika. Lastly ladle your soup into individual bowls; top each serving with sour cream and chives, if desired. Enjoy!

Makes: 4 to 6 servings

 

What You Will Need:

Three pounds of rinsed and peeled russet potatoes  (cut into 1? pieces)

One and three-quarters Tbsp of powdered gelatin

Four Tbsp of flour

Half tsp of ground coriander

Salt to taste

Peanut or canola oil (to fry with)

Four cups of water

 

What To Do:

First, put your oven rack in the center of your oven and heat your oven to 250º F. Then place your potatoes and four cups water into a food processor; pulse it until the potatoes are cut into roughly one-eighth inch pieces. Drain your potatoes and rinse. Make sure to shake the strainer to get out as much water as you can. Put the potatoes in a tea towel (make sure to chop any potato pieces that are too large), cover the potatoes with another towel. Then roll up the towels tightly to rid any remaining moisture.

 

Secondly, arrange your potatoes to where they are spaced out evenly on two rimmed baking sheets. Then, sprinkle the gelatin evenly over all the potatoes. Bake them (rotating the baking sheets once) until the gelatin melts. This should take about five minutes. Put your potatoes in a large bowl, making sure to use a rubber spatula, mix them well to distribute the gelatin. Now mix in the flour and coriander. Season lightly with salt. Get a large piece of plastic wrap and put it on a work surface that is slightly wet (water helps keep the plastic in place) with the short end facing you. Then put a quarter of the potato mix on the plastic wrap about six inches from you, and shape it into a log about twelve inches long and an inch thick. Lift the end of the plastic wrap closest to you and bring it over the log, use a ruler to compress the roll as you wrap the log. Now roll up the potato log and set it aside. Repeat with the rest of the mixture; transfer logs to your freezer until they are firm but not frozen.

 

Thirdly, pour your oil into a five quart dutch oven to where it is about two inches in depth. Heat it over a med-high heat until a deep-fry thermometer reads 275º F. Next, slice through the plastic to get one inch by three-quarter inch tater tots. Toss the plastic wrap. Working in batches, you will need to add the tater tots to the oil and cook them, turning occasionally, until they are light brown. This should take about three minutes. Then, using a slotted spoon, transfer your potatoes to a rack that you set inside a baking sheet and let chill in the freezer for about twenty minutes.

 

Lastly, up the oil temperature to 350º F. Working in batches again, add your potatoes and cook, turning occasionally again, until they are browned and crisp. this should take about two minutes. Transfer them to paper towels to drain the oil and season them with salt. Serve hot and enjoy!

2 teaspoons finely grated fresh lemon zest
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
1 teaspoon anchovy paste
1 tablespoon sherry vinegar
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
3 small zucchini, trimmed and thinly sliced into half moons
3 cups loosely packed frisee (French curly endive), trimmed and torn into small pieces
1/4 cup loosely packed fresh flat-leaf parsley
1/4 cup loosely packed fresh mint leaves, torn in 1/2 lengthwise if large
1/4 cup loosely packed fresh basil leaves, torn into small pieces
12 kalamata olives, pitted and thinly sliced lengthwise
1 small red onion, halved lengthwise and thinly sliced crosswise

 

 

 

How To Prepare:

First you will need a large bowl. In that bowl you will whisk together your fresh lemon zest, the mustard, lemon juice, sherry vinegar, honey, anchovy paste, salt, and pepper until it is well combined. Next you will need to slowly whisk your olive oil in. Then go ahead and add in your zucchini, onion, olives, frisee, and herbs. Toss it all to coat and serve immediately. Enjoy!

Smoked salmon is the ideal sandwich for a brunch because it is tasty, but still connected with bagels and lox. This recipe takes a spin on the traditional smoked salmon bagel.

 

Ingredients:

– One pack of smoked salmon
– One loaf of thinly sliced bread (I used pumpernickel)
– One tub cream cheese
– One peeled and thinly sliced cucumber
– Two stalks of finely diced green onion

Directions:

With the loaf of bread,cut it from corner to corner to make tiny triangles or if preferred you can cut into squares. Take a small bowl and mix together the green onion and cream cheese. Next get two slices of bread and spread your cream cheese blend as desired on both sides. Now add a layer of cucumber slices and of smoked salmon. Repeat the steps until you make however many sandwiches you need. Also toothpicks may be needed if not enough of the cream cheese mix is used on the sandwiches. They will help hold them together.

 

Gourmand Griddled Cheese

This sandwich is a hit with both grown ups and kids. If you do not care for spice, then leave out sriracha hot sauce. However it makes the perfect spicy choice for your buffet table.

– One loaf of thinly sliced bread (I find sourdough to work best)
– Three seeded, peeled and finely sliced avocados
– One block of thinly chopped sharp cheddar
– Mayo

Directions:

Grab the sourdough bread loaf and cut off its crust. Now with two pieces of bread take one and spread a layer of mayo and on the other drizzle some sriracha (if you’re using it). Then layer on some avocado and cheese, and pepper and salt, and put your sandwich together. Roast it with a grill, pan, or griddle until nice and crispy, with the cheese softened. Cut as desired, I like it in fourths and serve!

Sixteen frozen dinner rolls (Rhodes brand)
Half a cup of melted butter
One cup of Parmesan cheese (grated)
One teaspoon of dry parsley flakes
One and a half teaspoons of garlic powder

Half teaspoon of Italian seasoning

Next cover the bottom of the pan with foil to keep the butter from leaking out.
Lastly, bake them at 350 degrees for twenty to twenty-five minutes or until the center is done.

Oven Fried Onion Rings

Makes: About four to six servings
Total Time: One hour and ten minutes

 

What You’ll Need:

For Onion Rings:

Half a cup of all purpose flour
One room temp large egg
Half a cup of room temp buttermilk
Quarter tsp of cayenne pepper
Half tsp of salt
Quarter tsp of black pepper
About thirty saltine crackers
Four cups of some kettle cooked potato chips
Two large yellow onions
Six Tbsp of vegetable oil

For Dipping Sauce:

Half a cup of mayo
Two tsp of ketchup
Two Tbsp of horseradish
Quarter tsp of paprika
Quarter tsp of salt
One eighth tsp of garlic powder
One eighth tsp of dried oregano
One eighth tsp of ground black pepper
One eighth tsp of cayenne pepper

 

DIRECTIONS:

First you will want to move your oven racks to the lower middle and upper middle spots. Then pre heat your oven to 450 degrees F. Now put a quarter cup of flour in a shallow baking dish. Next, beat the egg and buttermilk together in a separate bowl. Then whisk the remaining quarter cup of flour, the salt and pepper, and cayenne into the buttermilk mixture. Grab a food processor and pulse the saltines and potato chips until they are finely ground, and place your crumb mixture into a second shallow baking dish.

Doing one at a time, flop each onion ring around in the flour and shake off any excess. Next dip the rings into your buttermilk mixture and allow any excess to drip back in the bowl. Now drop it in the crumb coating, making sure to turn the rings to coat evenly. Place the coated rings on a large plate or tray.

Next, pour three Tbsp of oil onto each of the rimmed baking sheets. Put your baking sheets in the oven and heat them until they are just smoking. This should take about eight minutes. Then carefully tilt the heated sheets to coat them evenly with the oil. Now arrange your onion rings on the sheets and bake. Make sure to flip the onion rings and switching and rotating position of baking sheets halfway through baking, until they are golden brown on both sides. This normally takes about fifteen minutes. After they are done I suggest laying the onion rings on paper towel-lined plate to get rid of any excess oil. To make your dip just mix together everything and refrigerate it. Serve them and enjoy!

*Note* Your onion rings can be breaded in ahead of time and refrigerated for up to an hour if you’d rather. Just make sure to let them sit at room temperature for about thirty minutes before you bake them. If you were to bake them while they were still chilled from the refrigerator, then your onions would not cook enough for them to soften and would still be crunchy.

Four cups of some whole wheat/high fiber macaroni noodles (cooked)

One Tbsp of butter

One Tbsp of all purpose flour

One cup of milk (skim)

One clove of garlic (minced)

Three oz of shredded sharp cheddar cheese

Three oz of shredded Gruyere cheese

One egg

One egg white

One cup of freshly cooked spinach

Some salt & pepper to taste

 

 

 

What You Will Need:

 

First, you will need to pre-heat the oven to four-hundred degrees F. Then, you will lightly mist a twelve cup muffin tin with your cooking spray, and set it aside. Next you will take a small sauce pot and use it to melt your butter over a med heat. Now add the flour and mix it into butter while stirring until it is nice and thick. Next stir in your garlic and milk. Bring that mixture to where it is just under a boil. Then you will add the two cheeses and whisk them all together until they are thoroughly combined into a beautiful sauce. Now remove your cheese sauce from heat and then mix in both the egg white and egg until fully combined. Now take your large bowl and combine your spinach, pasta, the salt and pepper, and your cheese sauce. Mix everything together thoroughly. Now you will need to spoon in the mixture into the muffin tin cups and bake them for about ten to fifteen minutes or until your tops of the “muffins” are slightly brown. Lastly let them sit and cool for about five minutes before taking them out of the muffin tin. Serve and enjoy!

Hushpuppies just have to be one of my most favorite side dishes to pair with some good old fried fish or shrimp! This specific recipe for hush puppies is super simple and takes nearly no time at all. It can also be accomplished by those with minimal cooking experience. With a total cooking time of less than ten minutes, there is no way you can go wrong with this recipe. What To Get:

Two, Eight and a half ounce packages of Jiffy corn muffin mix

Two beaten eggs

A Quarter cup of finely chopped sweet onion

Canola oil for frying

 

What To Do:

First you will measure out two and one quarter cups of the Jiffy corn muffin mix (you can store leftover mix for later use). Next just combine the muffin mix with your chopped sweet onion and eggs. Make sure you combine everything well. Now drop your batter by the tablespoonfuls into your hot oil. Make sure to turn them when they are getting golden brown and fry them on other side till they are golden all over. Take out your hushpuppies with a slotted spoon to help drain the oil, and place on a rack or plate that is lined with paper towels so as to drain off any excess frying oil. Lastly, simply serve and enjoy!

I’ve always been a picky eater. Always. I’ve never cared for some fruits, wild game, and you can forget about vegetables. So obviously, when the whole cauliflower fad was going around, I wasn’t the least bit interested. I saw posts for cauliflower crust, and cauliflower rice. There could have very well been a post for cauliflower ice cream, who knows. All I knew was that to me it was probably the least liked vegetable, so I wanted no part. Then I saw a recipe for a cauliflower cream sauce…that got my attention. As a mom I am constantly trying to trick my kids into eating healthier so they can get the nutriton that I had fought against my whole childhood. I hide vegetables in my spaghetti sauce, so why NOT in a cream sauce too? My kids love it, I love it…it has been a big win all around! I hope you and your family enjoy it as well! I personally love to pair it with some penne pasta and shrimp, but it would go well with anything you would normally pair a cream sauce with.

Total Time: Ten Minutes

Makes: Three Servings

 

What You Will Need:

1 head of cauliflower (make sure to take off the outer leaves)

 

How To Make:

First cook your pasta according to the package instructions. While that is cooking, chop up your cauliflower into quarters. Chop off the  florets of the cauliflower and cut your stems into one inch pieces so that it will cook evenly.
Put your chopped cauliflower into a steaming basket and let it steam for about five to ten minutes. you should be able to poke the cauliflower easily with a fork. Take the cauliflower from your basket, and put it in a blender or food processor. Puree your cauliflower until it is nice and smooth. If you want the “sauce” a litter thinner you may add some water. Divide it all into one cup portions. If you are not going to use it right away, freeze it for later use!

 

NOTES

* If you don’t have a steaming basket available, you can add your chopped cauliflower directly to boiling water and let it cook for about three to six minutes.
* You can also pre season your sauce before freezing if you’d like. (I’ve included a video that adds a bit more pazazz to this basic recipe)
