What To Get:

One chopped and roasted red bell pepper

One minced shallot

One minced garlic clove

One tsp of minced jalapeño pepper

Three Tbsp of plain greek yogurt

One Tbsp of apple cider vinegar

One tsp of fresh lemon juice

One quarter cup + One Tbsp of extra-virgin olive oil

Kosher salt

One torn head of lettuce (large pieces)

One quarter cup of cilantro leaves

One tsp of fresh lime juice

Two wedged Hass avocados

One pound of cooked shrimp


How To Make It:


First you will need a blender. Dump in the vinegar, garlic, roasted pepper, shallot, jalapeño, yogurt, and lemon juice and puree them until the mixture is smooth. Scrape out your puree into a medium sized bowl and then whisk in a quarter cup of your olive oil. Season with the salt to taste.

Now take a large bowl and toss together the lettuce, cilantro leaves, one Tbsp of olive oil, and your lime juice. Then season to taste with salt. Arrange your dressed lettuce, shrimp, and avocado wedges on the plates and then drizzle some of your dressing over everything. You can serve the remaining dressing on the side. If you would like you can also make the dressing before hand and refrigerate overnight! Enjoy!

Most of my recipes focus on main dishes, so I thought I’d mix it up a bit and show you an appetizer! While this appetizer is extremely easy to whip up, the flavors you will experience are anything but simple.  A savory, smokey with a hint of sweet…it really is quite a bit of taste to process.  Apart from the phenomenal flavor, there is this attractive quality of being a fun and delicious food on a stick. I don’t know anyone who doesn’t think that is fun!  In one hand you hold your stick, in the other, a great drink & you’re set!



Yields about 30 bites

 What you’ll need:

1/2 lb of med shrimp, peeled and de-veined (about 30 shrimp)
1 (7.9 oz) pack of Spanish chorizo, sliced into 1/4-inch “rounds”
1 finely minced clove of garlic
1/2 tsp of dried oregano
1 Tbsp of red wine vinegar
1 Tbsp of a dry Sherry
1/4 cup of extra virgin olive oil, plus a little extra for your pan
2 Tbsp of fresh chopped flat-leaf parsley


What To Do:

Get a medium sized bowl and in it combine the shrimp, oregano, garlic, vinegar, 1/4 cup of olive oil and Sherry. You’ll toss everything to coat. Then let it marinate in your fridge for a good 30mis.
Then, skewer a shrimp and a round of chorizo onto your toothpicks or skewers. Repeat until all the chorizo and shrimp have been used.
Next, you will want to work in batches. Heat one Tbsp of the olive oil in your large skillet over a med high heat.  Place some skewers in the pan and sear them on both their sides until the shrimp are nicely cooked through and the chorizo lightly browns. This should take about 3-4min. Lastly put your skewers on a serving platter and then garnish them with some parsley.  Serve them immediately. Most importantly, enjoy!

This is a delicious recipe for a shrimp salad sandwich. Not only will this help add a little variety to your everyday sandwich choices, but this quick recipe is both simple and tasty. What To Get:

1lb of shrimp (cooked, peeled and de-veined)
3 finely chopped hard boiled eggs
3 minced celery stalks
1/2 cup of mayonnaise
Dash of onion salt
Salt and pepper (to taste)
Seasoning salt
Celery salt
8 slices of your choice bread (I like mine toasted)
* Tomato slices and lettuce are optional*



What To Do:

First, make sure the shrimp is patted as dry as possible. Then chop your shrimp into nice chunky pieces. If your not a fan of it chopped chunky, you can always switch it up and chop it as fine as you would prefer. Now, put your shrimp in a large bowl and add your celery, the eggs and the mayonnaise. Mix your ingredients very well. Next add the seasonings as you would like. Now combine all the ingredients together. You’ll then get your choice of tasty bread. I personally like to spread a bit of mayonnaise on both pieces of bread and then just scoop up some shrimp salad and put on the bread. You cut the sandwich how you like depending on what bread you used. I also like to serve it with some lettuce and tomato, but you do not have to. Now take a bite and enjoy!

No thanks, I’ll pass. Then I came across this recipe online and saw that this lady added a bit of zing to a usually boring dish and I thought “Why not?”. So I gave it a try and WOW, I honestly didn’t think I’d like it as much as I did! So to all the skeptics reading this, come on over to the light, it is delicious! Also, I haven’t tried it yet, but the girl suggests trying it with tortilla chips!

Ready to Serve: 3 Hrs 15 Min


What you’ll need:

2lbs cooked shrimp (peeled and de-veined)
1 Tbsp of garlic (crushed)
1/2 cup red onion (finely chopped)
1/4 cup of cilantro, fresh (chopped)
1 1/2 cups of tomato and clam juice cocktail
1/4 cup of ketchup
1/4 cup of lime juice
Hot pepper sauce (to taste)
1/4 cup of prepared horseradish
Salt to taste
1 peeled, pitted and chopped avacado

Here is what you do:

Take your shrimp and put it in a large bowl. Stir the cilantro, red onion and garlic in. Then mix on in the tomato and clam juice cocktail, lime juice, horseradish, ketchup, and hot pepper sauce. Season with your salt. Then gently stir in that avocado. Next cover your mixture and refrigerate it for 2-3 hours. You can serve it in one large bowl or you can ladle it into individual bowls. Enjoy!

How To Prepare:


First you will need to preheat your large skillet on a medium-high heat. Now add your olive oil and your green beans to your skillet and sauté them for about three to four minutes. Make sure to stir them frequently, until your beans just are starting to brown and soften. Next, add the shallots and your garlic and let cook for another minute.

Now turn your heat down to medium. Add in your paprika, coconut milk, curry powder, and tapioca starch. Whisk everything together until it is well-combined. Add in your shrimp and cover to bring to a boil. Once the mixture boils, take off your lid and let cook for an additional five to eight minutes. It is finished once the shrimp are opaque and cooked through. Serve over your rice or quinoa if desired, and enjoy!

Half a pound of peeled and deveined shrimp

What To Do:

First off cook your pasta in a large pot as according to the package instructions. Then pour the cream in a large skillet. Simmer everything for about seven to eight minutes, or until it thickens. Next stir in your seafood, cooking it until the shrimp is no longer transparent. Then stir in your cheeses. Drain your pasta and serve the sauce and seafood over noodles. Serve and Enjoy!

What You Will Need:

One (sixteen ounce) package of bow tie pasta
Three Quarters of a stick of butter
One minced clove of garlic
salt and pepper to taste
One chopped yellow onion
One Tbsp of crushed red pepper flakes
One pound of crawfish tails
Two pints of heavy cream
Half Tbsp of crushed red pepper flakes
One bunch of chopped green onions


What To Do:

First off, cook your pasta as instructed by the package. While your pasta is cooking, melt the butter in a deep skillet over a medium heat. Now cook and stir in the garlic for one to two minutes. Then season with your salt and pepper. Stir in your yellow onion and the half tablespoon of red pepper flakes. Then cook it until the yellow onion becomes translucent. Next add the crawfish tails and cook two to three minutes, stirring continually. Then transfer your crawfish to another bowl, leaving as many onions as possible in the skillet. Pour in your heavy cream in the skillet and bring it to a boil; reduce to a low heat, and simmer until it thickens. Now sprinkle the remaining half tablespoon of red pepper flakes into your cream. Put the crawfish back into the sauce and simmer two to three minutes. Serve you sauce and seafood mixture over the drained pasta. You can garnish with chopped green onion if you wish. Enjoy!

What You Will Need:

Kosher salt
One pound of linguine
Two Tbsp of olive oil
Two med finely chopped garlic cloves
Quarter tsp of red pepper flakes
One and a half pounds of peeled and deveined large shrimp
One cup of dry white wine
Half stick of unsalted butter, cut into 4 pieces
One tsp of finely grated lemon zest
One-third cup of coarsely chopped parsley
Finely grated Parmesan cheese, for serving (optional)


What To Do:

First cook your pasta as instructed on the package. Then heat your oil in a large frying pan over a medium-high heat until it is shimmering. Now add the garlic and red pepper flakes, cook and stir them frequently, until fragrant, about ten to twenty seconds. Now add your shrimp and season everything with salt. Cook it, stirring occasionally, until your shrimp start to turn nice and pink. Then turn up your heat to high and add the wine to the pan. Keep cooking, stirring occasionally, until the alcohol smell has burned off. The liquid will be slightly reduced, and your shrimp should cooked through and are opaque. this should take about four minutes. Remove the frying pan from the heat. Then add your butter and lemon zest, and stir it until the butter has melted, Transfer the shrimp and sauce to the pot with the pasta.
Add your parsley and toss to combine. Top with grated Parmesan, if you choose. Serve and enjoy!

Healthy Eating Recipe: Lemon-Garlic Shrimp & Vegetables

One of my favorite dishes is shrimp scampi. Here we will be taking a look at a healthy variation of this dish. Eating healthy does not have to taste bad. When you eliminate the butter and substitute vegetables and seasonings you can have a meal that is easy to create, tastes good and is healthy for you. You can serve over linguine, whole wheat couscous or quinoa.

What You Will Need:

4 full teaspoons of extra virgin olive oil, split up

2 Nice large bell peppers, I prefer red, diced

2 lbs of asparagus. Cut into 1 inch lengths

2 teaspoons of freshly grated lemon

One half a teaspoon of salt, divided

5 whole cloves of garlic minced up

1 lb of uncooked shrimp count of 26 – 30 per lb. Devein and peeled

1 cup reduced-sodium chicken broth

1 teaspoon cornstarch

2 tablespoons lemon juice

2 tablespoons chopped fresh parsley

What To Do:

1. Heat 2 teaspoons of oil inside a large sized non-stick skillet or pan using medium to high heat. Add the bell peppers, asparagus, lemon zest and 1/4 teaspoon salt and cook, stirring occasionally, until just beginning to soften, about 6 minutes. Transfer the vegetables to a bowl; cover to keep warm.

2. Add your remaining 2 teaspoons oil and garlic to the pan and cook, stirring, until fragrant, about 30 seconds. Add shrimp and cook, stirring, for about a minute. Whisk broth and cornstarch in a small bowl until smooth and add to the pan along with the remaining 1/4 teaspoon salt. Cook, stirring, until the sauce has thickened slightly and the shrimp are pink and just cooked through, about 2 minutes more. Remove from the heat. Stir in lemon juice and parsley. Serve the shrimp and sauce over the vegetables.

Ingredients needed for a serving size of  4:

Medium Shrimp Twelve oz of shrimp that are peeled and the veins removed. Thaw first.

One medium sized lemon

Eight oz of dried fettuccine

Two tbsp of olive oil

Three to four cloves of garlic. Slice them thinly

Six cups of baby spinach

One half tsp of Italian seasonings crushed finely

Salt and pepper to taste

Fresh dill

1. First rinse the shrimp well and then pat dry using a paper towel. Shred one tsp of lemon peel and set aside. Juice the lemon and then set the juice aside. Cook you pasta per the directions on the package.

2. Next use a twelve inch skillet to heat the olive oil over a medium heat. Cook the garlic in hot oil for about one minute. Next add the shrimp and allow to cook for another three to four minutes. make sure and turn the shrimp on a frequent basis until the shrimp are opaque. Then add your spinach and drained pasta. Toss the mixture until the spinach starts to wilt. Add in your Italian seasonings with the shredded lemon peels and the two tsp of lemon juice. Top off with the fresh dill and then salt and pepper to taste. Serve right away.

I am definitely a lover of food and all of it’s magnificence! Absolutely nothing beats the smell of a freshly prepared dish on the stove or in the oven. I obviously adore a good seafood recipe so of course I just HAD to share with you this remarkable recipe for shrimp scampi that I got from the Food Network! This Shrimp Scampi recipe is a BLAST of wonderful flavor that the whole family can enjoy!

2 lbs of shrimp still in shell
3 Tbsp olive oil
2 Tbsp of dry white wine
Salt & black pepper to taste
1 1/2 sticks (about 12Tbsp) of butter
4 tsp garlic (minced)
1/4 cup of shallots (minced)
3 Tbsp parsley leaves (minced)
1 tsp rosemary leaves (minced)
1/4 tsp crushed red pepper flakes
1 tsp lemon zest
2 Tbsp lemon juice
1 XL egg yolk
2/3 cup of panko (Japanese dried bread flakes)
Lemon wedges used for serving



Preheat your oven to 425 (F)

Peel, devein, and butterfly your shrimp (make sure to leave the tails on). Place shrimp in mixing bowl and toss them gently with your olive oil, 2tsp salt & 1tsp pepper and wine. Set aside on countertop while you make your butter and garlic mix.

Take a small bowl, and mash your butter with the parsley, rosemary, garlic, red pepper flakes, shallots, lemon juice and zest, panko, egg yolk 1/2 teaspoon salt, and 1/4 teaspoon of pepper until they are all well blended.

Start from the outer edge of your 14 in oval shaped gratin dish and arrange the shrimp cut side down so that they all touch the bottom of the dish with their tails curling up and towards the middle of the gratin dish. Pour the marinade over the shrimp. Spreading the butter mixture evenly atop the shrimp. Place in the oven and bake for about 10-12min (until it is hot and bubbly). If you would like to brown the top, place it under the broiler for about 1min. Serve it with your lemon wedges and enjoy!

I would suggest testing some recipes before you go. Here are a couple of good ones.
Big Daddy’s Seafood Market – Grilled Shrimp with Lemon Aioli Things you will need:

This recipe will make six servings

Two lbs of medium size shrimp. Peel first and then devein

Two twenty oz cans of pineapple chunks. Same the juice

One half lb of bacon slices. Cut the bacon into pieces of two inches

Two large to medium red or other colored bell peppers. Chop them into small pieces

One half lb of fresh mushrooms make sure and remove the stems

Two cups of fresh cherry tomatoes

One cup of sweet and sour sauce

Big Daddy’s Seafood Market – Grilled Shrimp with Lemon Aioli – How To Make:

First preheat the grill to a high heat.
Nest thread the shrimp along with the pineapple, cherry tomatoes bacon, mushroom caps red bell peppers, and  on skewers. Make sure and alternate the ingredients. Place in a shallow baking dish. In a small bowl, mix sweet and sour sauce with reserved pineapple juice. Reserve a small amount for basting. Pour remaining sauce over skewers.
Lightly oil grill grate. Cook kabobs on preheated grill for 6 to 8 minutes, or until opaque, basting often with reserved sauce.
