Shopping List:

1 tablespoon extra-virgin olive oil
1/2 cup chopped onion
1/2 cup chopped red bell pepper
2 cloves garlic, minced
2 cups instant brown rice
1 1/3 cups reduced-sodium chicken broth
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 large pinch saffron (see Note)
1 pound peeled and deveined raw shrimp (21-25 per pound)
1 cup frozen green peas, thawed
1 pound mussels, scrubbed well (see Tip)
4 lemon wedges (optional)

 

How To Fix It:

First off, heat the oil in your large skillet over medium heat. Next, add the garlic, onion, and bell pepper. Cook it, making sure to stir occasionally. The vegetables will soften, this should take about three minutes. Add your rice, salt, pepper, broth, thyme, and saffron. Bring it all to a boil over a medium heat. Cover it and cook for five minutes.

Now, stir in the shrimp and peas. Next, place the mussels on top the rice and and cover. Continue cooking until your mussels have gotten nice and open and your rice is tender. This should take about five minutes. Remove it from the heat and let sit, covered. In about five minutes most of the liquid is absorbed and it can be served with lemon wedges, if you’d like.

 What You Will Need:

Six seeded and chopped plum tomatoes
One cup of freshly chopped celery
One quarter cup of freshly minced basil
Three Tbsp of balsamic vinegar
Three Tbsp of olive oil
Three Tbsp of Dijon mustard
Two freshly minced garlic cloves
One half tsp of salt

What You Will Need For The Mayo Spread:

One half cup of mayonnaise
One quarter cup of Dijon mustard
One Tbsp of finely chopped green onion
One minced garlic clove
Three quarters tsp of dried oregano
One lb of cut French bread (half inch slices)

 

How To Prepare:

First you will need a large bowl. In that bowl you will combine the plum tomatoes, chopped celery, the two minced garlic cloves, minced basil, vinegar, three Tbsp of Dijon mustard, olive oil and salt. Then cover and refrigerate your mixture for at least thirty minutes. While that chills we will make the mayo spread. For this you will need a small bowl to mix the mustard, mayo, garlic, onion, and oregano. Mix together well and set it aside.
Next you will ned to grill your bread slices over a medium-low heat and uncovered for just one to two minutes. They should be lightly toasted. Turn over your bread and spread the mayo mixture on them. Grill the bread for an additional one to two minutes. The bottoms of bread the bread should be nice and toasted. Next drain your tomato mixture and spoon it over the tops of the bread. Serve and enjoy!

Garlic Shrimp Pasta A Healthier Seafood Recipe

Ingredients:

8oz of uncooked multi-grain angel hair pasta or spaghetti
4cups of fresh baby spinach leaves
1 1/2 cups of halved cherry tomatoes
3tsp of virgin olive oil
1 finely chopped med onion (about 1/2 cup)
1 1/2lbs of fresh peeled med shrimp, deveined and remove tail shells
3 cloves of finely chopped garlic
1/4tsp of crushed red pepper flakes
1/2cup of a dry white wine
1/4cup Progresso® reduced-sodium chicken broth (from 32-oz carton)
1/4tsp of salt
1/8tsp of pepper
3Tbs of chopped fresh parsley
2Tbs of butter

Directions:

First, in 5-quart saucepan or Dutch oven, cook the pasta as directed on the package.
Then, drain and return to saucepan.
Stir in your spinach, tomatoes and the 2tsp of the oil. Cover it to keep warm.
While the pasta is cooking, heat the remaining 1 teaspoon oil over medium-high heat in a 12-inch nonstick skillet.
Add onion; cook and stir for 1min. Then add your shrimp, garlic and the pepper flakes; cook and stir for 2mins.
Stir in the wine, broth, salt and pepper. Then cook 2mins or until the shrimp are a lovely pink color and are firm.
Remove from heat, then stir in the parsley and butter until the butter melts.
Add your shrimp mixture to the pasta mixture in your saucepan. Toss it to mix.
Let cool, serve and enjoy!

What To Get:

Three Tablespoons of bacon fat or vegetable oil

Eight ounces of andouille sausage (or another spicy sausage), sliced into chunks

Two cups of yellow onions, chopped

One cup of celery, chopped

One cup of green bell pepper, chopped

One Tablespoon of garlic, finely chopped

Two teaspoons of dried thyme

Two teaspoons of dried basil

Half a teaspoon of black pepper

One 28oz can of undrained petite diced tomatoes

One 10oz can of undrained tomatoes with green chiles

One cup of chicken stock

Two cups of water

One and a half Tablespoons of sweet paprika

One teaspoon of Spanish smoked paprika

Three cups of converted rice (think Uncle Ben’s)

Two Tablespoons of butter

One and a half pounds of uncooked large shrimp, peeled and deveined

Twelve ounces of cooked crawfish tails

Two Tablespoons of parsley, finely chopped

 

How To Make It:

 

First you will need a very large pot or skillet. You will lightly brown your sausage in some oil over a med heat. Next add your celery, garlic, onion, green pepper, thyme, basil, and the black pepper. Cook everything while making sure to stir frequently. You will want to do this for about ten minutes.

Now stir in both cans of tomatoes (undrained), your water, chicken stock, and both the paprikas. Bring it all to a simmer and let cook, while uncovered, for about ten minutes. Now preheat your oven to 350 degrees F.

Then, stir in your rice and dump the contents of the pot in a large sized roasting pan that you lightly coated with cooking spray. Cover it all with foil and bake it at 350 degrees F for about thirty minutes. Then saute’ your shrimp in butter until they are just barely opaque in color. Next stir in your crawfish tails and saute’ until they are just heated through.

Now stir the crawfish tails, parsley and shrimp into your jambalaya. Give it a taste and add any salt or seasoning if needed. Re-cover it with the foil and return your pan to oven for an additional seven to ten minutes if you are serving it immediately. If your jambalaya will be reheated and served at a different time, then skip this step. Lastly simply serve and enjoy!

20 peeled and deveined shrimp

2 Tbsp of Lemon Juice

1 tsp of Oil

1 tsp of Chilly Powder

1/2 tsp Turmeric Powder

A pinch of Fenugreek Powder (Uluva Podi)

1/4 tsp of Black pepper Powder

1 tsp Fish Masala Powder (optional)

1 Tbsp Ginger Garlic Paste

2 Tbsp Lemon Juice

Salt

 

What To Do:

 

First, wash your shrimp thoroughly. Then add your lemon juice to the shrimp and soak them in water for about five to ten minutes. It helps in eliminating any unwanted smell from the shrimp. Now drain water and set your shrimp aside.

Make your marinade take the chilly powder, turmeric, fenugreek, black pepper, garlic paste, lemon juice and fish masala powder (optional), and add them to your shrimp. Keep in the fridge for thirty minutes.

Heat a non stick griddle or frying pan and put in your oil.

Add your marinated shrimp to the pan. Cover and cook on medium heat for three to five minutes.

Turn your shrimp and fry on the other side for an additional three to four minutes till they begin to brown. Be careful not to burn the shrimp.

One minced shallot

One tsp of minced jalapeño pepper

Three Tbsp of plain greek yogurt

One Tbsp of apple cider vinegar

Kosher salt

One torn head of lettuce (large pieces)

One quarter cup of cilantro leaves

One tsp of fresh lime juice

Two wedged Hass avocados

One pound of cooked shrimp

 

How To Make It:

 

First you will need a blender. Dump in the vinegar, garlic, roasted pepper, shallot, jalapeño, yogurt, and lemon juice and puree them until the mixture is smooth. Scrape out your puree into a medium sized bowl and then whisk in a quarter cup of your olive oil. Season with the salt to taste.

Now take a large bowl and toss together the lettuce, cilantro leaves, one Tbsp of olive oil, and your lime juice. Then season to taste with salt. Arrange your dressed lettuce, shrimp, and avocado wedges on the plates and then drizzle some of your dressing over everything. You can serve the remaining dressing on the side. Most of my recipes focus on main dishes, so I thought I’d mix it up a bit and show you an appetizer! While this appetizer is extremely easy to whip up, the flavors you will experience are anything but simple.  A savory, smokey with a hint of sweet…it really is quite a bit of taste to process.  Apart from the phenomenal flavor, there is this attractive quality of being a fun and delicious food on a stick. I don’t know anyone who doesn’t think that is fun!  In one hand you hold your stick, in the other, a great drink & you’re set!

 

 

Yields about 30 bites

 What you’ll need:

1/2 lb of med shrimp, peeled and de-veined (about 30 shrimp)
1 (7.9 oz) pack of Spanish chorizo, sliced into 1/4-inch “rounds”
1 finely minced clove of garlic
1/2 tsp of dried oregano
1 Tbsp of red wine vinegar
1 Tbsp of a dry Sherry
1/4 cup of extra virgin olive oil, plus a little extra for your pan
2 Tbsp of fresh chopped flat-leaf parsley

 

What To Do:

Get a medium sized bowl and in it combine the shrimp, oregano, garlic, vinegar, 1/4 cup of olive oil and Sherry. You’ll toss everything to coat. Then let it marinate in your fridge for a good 30mis.
Then, skewer a shrimp and a round of chorizo onto your toothpicks or skewers. Repeat until all the chorizo and shrimp have been used.
Next, you will want to work in batches. Heat one Tbsp of the olive oil in your large skillet over a med high heat.  Place some skewers in the pan and sear them on both their sides until the shrimp are nicely cooked through and the chorizo lightly browns. This should take about 3-4min. Lastly put your skewers on a serving platter and then garnish them with some parsley.  Serve them immediately. Most importantly, enjoy!

What To Get:

1lb of shrimp (cooked, peeled and de-veined)
3 finely chopped hard boiled eggs
3 minced celery stalks
1/2 cup of mayonnaise
Dash of onion salt
Salt and pepper (to taste)
Seasoning salt
Celery salt
8 slices of your choice bread (I like mine toasted)
* Tomato slices and lettuce are optional*

 

 

What To Do:

First, make sure the shrimp is patted as dry as possible. Then chop your shrimp into nice chunky pieces. If your not a fan of it chopped chunky, you can always switch it up and chop it as fine as you would prefer. Now, put your shrimp in a large bowl and add your celery, the eggs and the mayonnaise. Mix your ingredients very well. Next add the seasonings as you would like. Now combine all the ingredients together. You’ll then get your choice of tasty bread. I personally like to spread a bit of mayonnaise on both pieces of bread and then just scoop up some shrimp salad and put on the bread. You cut the sandwich how you like depending on what bread you used. I also like to serve it with some lettuce and tomato, but you do not have to. Now take a bite and enjoy!
