Grilled Fish With Pineapple Salsa
Cooking healthy doesn’t have to be complicated. Some of the most simple things can be best for you. Here is a grilled fish recipe you are sure to enjoy. It takes what could be just plain old grilled fish and adds a little something extra, with the pineapple salsa you will find this dish to be anything but complicated or boring. What To Get:
2 cups of fresh pineapple (cubed)
2 chopped green onions
1/4 cup of green pepper (finely chopped)
1/4 cup of fresh cilantro (minced)
4 tsp AND 2 Tbsp of lime juice (keep them divided)
1/8 tsp AND 1/4 tsp of salt (keep divided also)
Dash of cayenne pepper
1 Tbsp of canola oil
1/8 tsp of pepper
* I just use tilapia & keep my filets around 4oz each
What To Do:
Take a small bowl and in it combine your green pepper, onions, cilantro, pineapple, 1/8 tsp salt, 4tsp of lime juice and cayenne. Chill until ready to serve. Next combine the remaining lime juice and oil and drizzle it over the fillets. Sprinkle on the remaining salt and pepper. You may want to use some long handled tongs and then moisten a paper towel with cooking oil as well as lightly coat your grill rack. Then, grill your fish (while covered) over a medium heat or you can also broil 4 in. from heat for about 3 to 4 min on each side. The fish should flake easily with a fork. Lastly serve with your salsa.
Makes 8 servings (2 cups of salsa).
