Oyster And Crab Bisque Recipe – Big Daddy Seafood Market
What You Will Need:
One quart of oysters in their liquor (shucked)
Salt and pepper to taste
Four stalks of med cut celery
One med chopped onion
Four cups milk
Two cups of a heavy cream
Four Tbsp of butter
Two Tbsp of all-purpose flour
Nutmeg (freshly grated)
One Tbsp of fresh lemon juice
One Tbsp of Worcestershire sauce
Freshly chopped parsley leaves
What To Do:
First, you will simmer your oysters and oyster liqueur in your covered pot on a low heat. Add in a little salt and pepper, making sure to stir it occasionally until the edges of oysters curl. This should take about six minutes.
Next, lift the oysters out of your stock using a slotted spoon. Put oysters in a colander. Make sure to place a bowl underneath to catch pot liquor. Now pour stock from your pot into the bowl, be careful to discard any oyster dregs and set the stock aside.
Now is time to cook the celery and onion in some water until they are tender. Then drain and reserve the broth. Next add the broth to oyster stock (should be about 2 cups), then add milk and cream (reserve some cream to whip for the garnish). Heat your butter and whisk in the flour to make a roux. Add stock mixture to roux. Stir it briskly until it thickens and is smooth. Add a bit of nutmeg, and a pinch of the curry powder, lemon juice, Worcestershire sauce, and the cayenne.
Lastly mash the oysters with your celery and the onions. Mix them well then add to the oyster stock. Keep it warm over some hot water until it is time to serve. Whip reserved cream. Serve and enjoy!
