Quick Avocado And Shrimp Salad With Red Goddess Dressing
What To Get:
One chopped and roasted red bell pepper
One minced shallot
One minced garlic clove
One tsp of minced jalapeño pepper
Three Tbsp of plain greek yogurt
One Tbsp of apple cider vinegar
One tsp of fresh lemon juice
One quarter cup + One Tbsp of extra-virgin olive oil
One torn head of lettuce (large pieces)
One quarter cup of cilantro leaves
One tsp of fresh lime juice
Two wedged Hass avocados
One pound of cooked shrimp
How To Make It:
First you will need a blender. Dump in the vinegar, garlic, roasted pepper, shallot, jalapeño, yogurt, and lemon juice and puree them until the mixture is smooth. Scrape out your puree into a medium sized bowl and then whisk in a quarter cup of your olive oil. Season with the salt to taste.
Now take a large bowl and toss together the lettuce, cilantro leaves, one Tbsp of olive oil, and your lime juice. Then season to taste with salt. Arrange your dressed lettuce, shrimp, and avocado wedges on the plates and then drizzle some of your dressing over everything. You can serve the remaining dressing on the side. If you would like you can also make the dressing before hand and refrigerate overnight! Enjoy!
