Shrimp and Grits Recipe
When some people hear the words “Shrimp and Grits” they may be left scratching their heads while others are rubbing their bellies! Shrimp and grits is just one of my many favorite classic southern dishes. The great thing about it is that it really is an “anytime” dish. It makes for a delicious breakfast or satisfying supper. It is so fantastic I think everyone should know all about it. So here is a quick history fact for you.
Shrimp and grits got it’s start as a seasonal dish for fisherman. it consisted of the shrimp being cooked in a bacon grease and served over creamy, delicious grits down in the Low Country where the dish was also known as “breakfast shrimp.” This simple seafood breakfast meal became an iconic Southern dish after Craig Claiborne (a great American resturant critic) wrote about it in the New York Times in 1985. Now that we know a little more about it, let’s roll up our sleeves and get started, you’ll thank me later.
What you need:
3 cups of chicken broth
1 cup of uncooked grits (quick cooking)
1/2 tsp of salt
1/4 tsp of freshly ground pepper
2 Tbsp of butter
2 cups of shredded Cheddar
6 slices of chopped bacon
2lbs of med shrimp, peeled and de-veined
1 Tbsp of lemon juice
2 tsp of Worcestershire sauce
2 Tbsp of chopped parsley
6 chopped green onions
2 minced garlic cloves
Bring your chicken broth to a boil over a med high heat. Then stir in the grits. Keep cooking while occasionally stirring for about 5-7 min or until it is thickened. Then take it off the heat and stir in the salt, pepper and butter. Set aside but keep warm.
Next, you’ll cook your bacon in a large sized non-stick skillet on a med high heat for 3 min or until the bacon is crisp. Then, remove the bacon from skillet. Cook the shrimp in the same with the same heat for another 3 min or until they are almost pink. You will want to stir them occasionally. Add your lemon juice, Worcestershire sauce, onions and parsely and cook that for 3 min. Stir in your bacon. Then
spoon your grits onto shallow bowls or on plates, top with the shrimp mixture and serve immediately.
