Shopping List:

Two tsp of canola oil
One fresh bay leaf
One med sized onion cut in half and thinly sliced
Two seeded and thinly sliced jalapeño peppers
Four minced cloves garlic
One lb med sized peeled and deveined raw shrimp
Three med diced tomatoes
Quarter cup thinly sliced and pitted green olives
One lime, quartered

 

 

How To Make It:

First you will need to heat the oil in your large nonstick skillet over a medium heat. Then put in your bay leaf and let it cook for about one minute. Next put in your onion, garlic, and jalapeños. Let cook, stirring, until softened. This should take about three minutes. Next put in the shrimp, cover it and let cook until they are pink and just cooked through. this should take three to four minutes. Stir in your olives and tomatoes. Bring it all to a simmer, reduce your heat to a medium-low. Then put back on your cover and cook until the tomatoes are just about broken down, few minutes more. Remove your bay leaf and serve with the lime wedges.
