Ching He Huang/Chinese Food Made Easy/Seafood/Wok-cooked hoki fish with sesame soy sauce

Ching shows a regular fish buyer at the market how to make hoki fish served with sesame soy sauce.
Ingredients
2 hoki fish fillets, membrane removed
salt and ground white pepper
3 tbsp groundnut oil
4 cloves garlic, finely chopped
2.5cm/1in piece fresh root ginger, peeled, finely chopped
1 red chilli, seeds removed, flesh finely chopped
1 tbsp of Shaoxing rice wine
4-5 tbsp light soy sauce
2 tbsp toasted sesame oil
2 spring onions, cut into thin strips (julienne)
1 tbsp chopped fresh coriander
To serve
steamed rice or wholewheat noodles
steamed asparagus
steamed broccoli

Method
1. Season the hoki fish fillets with salt and ground white pepper, then slice into six equal-sized pieces.
2. Heat a wok until smoking and add the groundnut oil. Add the fish, pressing down lightly on the pieces of fish as they cook. Cook for 3-4 minutes on one side, then reduce the heat to medium.
3. Turn the fish over and sprinkle over the garlic, ginger and chilli. Cook for a further 3-4 minutes (depending on the size of the fillet), or until the flesh has turned opaque and flakes easily when poked with a pair of chopsticks or a fork.
4. Season with the soy sauce and sesame oil and spoon the sauce over the fish. Add the spring onion strips and chopped coriander and cook for 1-2 minutes, or until the herbs have wilted slightly.
5. To serve, transfer the fish to a serving plate and garnish with the wilted herbs. Spoon over the cooking juices from the pan and serve immediately with steamed rice or dressed wholewheat noodles and steamed asparagus and broccoli.

Why should I have wine delivered at home?

Home delivery of food items has become a growing trend around the world. There are several sites that are perfect examples of a place to go for my favorite “food” item, wine. The reasons to buy wine online and have it delivered are numerous. With this in mind I started a hunt for the perfect wine delivery site.

Most of the sites I looked at have an ample selection of wines that can be delivered to your door. Most of the major producers offer online access. There are also many smaller producers that you would never be able to sample at your local grocer.  This is a huge advantage to buying wine and then having it delivered. The time it takes to go to different outlets to shop for different brands can be extensive.

Delivery is usually very easy to set up. Most sites offer delivery within two or three days. Some will deliver the next day depending on your time of order and geographic location. This is another advantage of convenience. The only time this is not available is when you realize at 5:00 that you need a bottle of wine at 6:00. This is a very difficult situation to fix other than getting in your auto and going yourself. When you have done a little of planning home delivery of wine is a very viable option.

I had one occasion where the bottle arrived broken. All I had to do was call the number listed on the site, and they worked it out. The lady was really rather pleasant to deal with. She even told me if I ever received a wine that I wasn’t happy with to give them a ring and they would work with me. Now that is service. Most sites are more than willing to work with you. They understand that accidents happen. Make sure and report it as soon as you discover the problem.

Home delivery is an option of convenience. It is something that is becoming more available and accepted and even expected by consumers. To me the convenience and the savings are really a great deal. Check it out and post your thoughts.

Fish have cancer-fighting properties

The cancer-fighting properties of fish and other seafood appear to be key in fighting colon cancer. The long-chain omega-3 fatty accids found in seafood appear to be key in preventing colon cancer. Scientists in North Carolina examined the diets of nearly 2,000 people and found those who consumed more omega-3 fatty acids had a reduced risk of distal large bowel cancer.
