Is Gulf seafood safe to eat?

Let me be clear. Seafood from the Gulf today is safe to eat,” declared President Obama last week during a visit to Mississippi. Yet, a week later, fear over the Gulf seafood supply has not died down.

“I’m staying away from seafood,” said Columbus resident Greg Wilder. “I don’t want to trust no seafood – not right now. We’re eating less and less seafood because of the oil spill.”

“I’m not going to any type of restaurants that involve seafood right now,” said Brooke Olson. “I’m just scared to get a disease or just dying or just being contaminated.”

“Well, I think everyone is a little scared,” explains Jamie Gruber, the lead chef at The Market, a restaurant in downtown Columbus. “And, you have to use your own common sense.”

His business thrives on what is caught in the waters. Gruber understands consumer concerns, but adds Seafood is safe to eat.

“The same principles apply,” he explains. “When you’re shopping for it, you want to make sure there is not a smell there. You want to make sure the meat is nice and firm. If you’re dealing with a whole fish, you’re looking for the gills to still have some color. And, of course, the skin to have some color in it. As long as you buy from a good, reputable place, you should be fine.”

Gruber says fortunately the oil spill has not affected business. But, he remains concerned over the spill’s long term effects.

“The one fish that we’re really concerned about is the Gulf Red Snapper because it’s the only one that comes from the Gulf,” Gruber said.

Tilapia Recipe

Tilapia is now one of the Top 10 fish consumed in America. In fact, four ounces of tilapia has just over 100 calories, 21 grams of protein, and no saturated fat or cholesterol.

Chef Jason Hill of CookingSessions.com prepares a tilapia recipe that’s healthy and delicious. We recommend only U.S. farmed tilapia, followed by those farmed from Central and South America. Monterey Bay Aquarium Seafood Watch warns that tilapia from China and Taiwan may be contaminated.

Tilapia recipes can include baked tilapia, grilled tilapia or fried tilapia. The rising popularity of this fish has made recipes for tilapia easy to come by.

I recently hosted a cooking show, and part of the class focused on healthy entrees. I chose a tilapia recipe served with sauteed bell peppers.

Tilapia is a fresh water fish whose meat is firm, white and flaky. it has a pleasant mild and sweet flavor, and is reasonably priced in comparison to other seafood.

Today, we are cooking tilapia in a crispy cornmeal coating. You’ll need about 6 tilapia filets for this preparation.

To begin, toast about 1 cup of cornmeal in a large saute pan over medium heat. After about 2 minutes, set the cornmeal aside in a large 13×9 casserole dish.

Next, we’re going to prepare the sauteed pepper topping. Today I’m only preparing two fillets, but this recipes make enough sauce for 6. Whatever sauce you don’t use, can easily be frozen.

Place about 2 tablespoons olive oil in a skillet over medium high heat and add 1/4 of a thinly sliced onion, 1 seeded and sliced pasilla or poblano pepper, 1 thinly sliced red bell pepper and 1 thinly sliced green bell pepper.

After that cooks down and becomes soft, add 1/2 cup of water, 2 tsp. Worcestershire sauce, 1 small diced tomato, 1/2 tsp. sugar, 1 tsp. tomato paste and 1 bay leaf. Stir and simmer about 15 minutes until the sauce thickens up. Keep over very low heat until ready to serve, and season to taste with a bit of salt and pepper.

Next, season each tilapia filet with salt and pepper, and roll in the toasted cornmeal. Make sure to coat both sides well.

In a large saute pan, heat about 3 tablespoons of olive oil over medium heat. When the pan is hot, fry the tilapia until crisp and brown — about 4-5 minutes each side.

Serve with a generous topping of the sauteed peppers and steamed basmati rice. I hope you enjoy it. Thanks for tubing in!

Betty’s Hearty and Healthy Seafood Bisque Recipe

In this video, Betty makes a Hearty and Healthy Seafood Bisque. This is an imitation of the soup that Rick ordered at Murray’s Restaurant at our Valentine’s dinner. This seafood bisque features mainly canned items, so it is very quick and easy to make. It contains canned shrimp, canned crab meat, cannned mushroon, celery, and tomato soups, along with some milk, parsley, minced onion, and seasonings. It tastes super!

Ingredients:

10.75-oz. can condensed cream of mushroom soup
10.75 oz. can condensed cream of celery soup
1/2 of a 10.75-oz. can of tomato soup
1 cup milk
1 tablespoon chopped fresh parsley (You may use 1/3 tablespoon dried parsley.)
1 tablespoon minced onion
4-oz. can small shrimp, drained and rinsed
6-oz. can crab meat, drained and rinsed
2 tablespoons butter
salt and pepper, to taste

In a large deep saucepan, combine 1 can cream of mushroom soup, 1 can cream of celery soup, and 1/2 can tomato soup, 1 cup milk, 1 tablespoon chopped parsley, 1 tablespoon minced onion, 4-oz can small shrimp, 6-oz, can crab meat, 2 tablespoons butter, and salt and pepper, to taste. Heat through and serve immediately with saltine crackers or toasted bread. This is a great bisque! –Betty :)
